Paav-Bhaji

Ingredients:
2 medium potatoes, peeled and diced
1 cups chopped cauliflower
1/2 cup peas
1/2 cup gren beans
3 tablespoons oil
3 tablespoons butter
2 green chilies chopped
2 tablespoon finely sliced ginger-garlic paste
3 medium chopped tomatoes
2 large chopped onions
1/2 teaspoon red chili powder
1/2 teaspoon turmeric
2 teaspoon salt (adjust to taste)
1 teaspoon garam masala
1 tablespoon pavbhaji masala
1/4 cup chopped cilantro (hara dhania)
sliced cucumber
Method:
1. Boil all the vegetables potatoes, cauliflower, peas, beans and in about 1 ? cup of water. Don?t add too much water, just enough to cook.
2. After the vegetables are soft and tender, drain the excess water and mash them coarsely with a fork or potato masher.
3. Heat the oil in a frying pan over medium heat.
4. Add chopped onions , ginger-garlic paste and let it cook till it becomes pink.
5. Add tomatoes, green chilies, cilantro and saut? for 2-3 minutes until pasty.
6. Next add the red chili powder,turmeric, garam masala ,pav bhaji masala and mix it well.
7. Add mashed vegetables.
8. Using a spatula, simultaneously mash and stir all the vegetables for 5 minutes.
9. Add salt and two tablespoons of butter, stir-fry for another minute.
10. Add about ? cup of water or as needed, and let it cook for a minute.
Turn off the heat.
Toast the halves bun over a frying pan using butter over medium heat until buns are golden brown from both sides.
Serve toasted buns with bhaji (mixed vegetables), garnish with cilantro and butter on bhaji and sliced cucumber or onion.
